For home cooks making sushi rolls, nigiri or chirashi bowls, Kaneyama Sushi Rice is a medium-grain California rice formulated to absorb seasoning evenly and hold its shape. The 1lb pack is sized for regular home batches without excess storage.
This rice has the starch content and grain structure traditional sushi preparation requires. Cook it with the water absorption method, season with vinegar, sugar and salt whilst warm, then fan to cool before shaping. Works equally well for rice bowls and other Asian dishes that benefit from a sticky, cohesive grain.
