El Guapo's mild dried red chiles have a sweet bell pepper flavour with gentle heat, suited to enchilada sauces, soups, stews, and braises. Soak them in hot water until soft, remove the stem and seeds, then purée with garlic and spices for red chile sauce for tamales or seasoned pork for tacos.
